Nice! Can extra sharp cheddar be used in place of American cheese?

it would add a richer flavor and if your daring, get a block of hickory smoked extra sharp cheddar :P
or 15 year aged select cheddar (as my dad says"that one is sharp enough to cut with") :lol:

heres a good one for eggplant lovers



Easy Eggplant Dish

Prep Time:
10 Min
Cook Time:
40 Min
Ready In:
50 Min

Original Recipe Yield 6 servings

Ingredients

* 1 eggplant, diced
* 1 yellow squash, peeled and diced
* 1 cup chopped onions
* 1 cup dry bread crumbs
* 1 tablespoon butter
* 1/8 cup canned sliced green chiles
* 1/3 cup crushed buttery round crackers
* 1/2 cup shredded mozzarella cheese

Directions

1. Preheat oven to 350 degrees F (175 degrees C).
2. Bring a large pot of salted water to a boil. Add eggplant and squash and cook until tender but still firm, about 10 minutes. Drain and cool.
3. In a 2 quart casserole dish combine eggplant, squash, onions, bread crumbs, butter and chiles. Sprinkle crushed crackers and cheese over the top.
4. Bake in preheated oven for 30 minutes.

jams and jellies

helped my mother a lot with canning meat and veggies a lot when I was younger
but started to get back into it (mom passed on over a year ago)
and canning brings back some good and very happy memories
anyhow started doing jams and jellies on my own for the first time
I must say its a lot of fun teaching my boy
and we are enjoying the FRUITS OF OUR LABORS ( :lol: yeah the pun was intended :lol: )
canned up 12 jars of apple, 9 jars of strawberry, and 10 jars of blackberry!

Most of your jelly and jam recipes you can find in the pectin boxes or you can find at allrecipes.com :mrgreen:
you can use any brand of pectin you want but the thing to remember is to follow the directions to the letter
(too much sugar or too little and the jelly wont set) :|
you'll end up with a fruit flavored pancake syrup. :o
(you can experiment by adding spices as they generally don't interfere with the sugar or pectin)

I did the apple jelly recipe but i added 4 tsp of cinnamon to the apple juice at he time i added the pectin
the finished product was a jelly that tasted like apple pie.
and the blackberry jam brought back some wonderful memories :dance:

making jams and jellies is very easy and its a lot of fun seeing the surprised look on peoples faces when they taste the finished product :lol:
